Anyone here like Pit BBQ or smoked meat???

Here�s a little smoker I whipped up last week. The tank is about 40-gallon air compressor tank dated 1948. The firebox is an old propane grill tank. The chimney is a piece of 3� fence post with a copper pipe around it for looks, The table is half of a 1920�s birthing table (the other half is part of my log splitter) from an old Doctors office. The wheels are very old wheelbarrow wheels. And the work area is part of an old porcelain top table. Every thing except the black paint was scrounged from around my workshop. It cost me $5 for the black paint, so that�s the total cash outlay, $5.<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" /><o:p></o:p> This is a return flow smoker, the heat and smoke come from the top of the firebox then it travels under a plate in the bottom of the tank to the far end of the tank where it comes up into the smoking area then out the chimney. It works like a charm! The last picture is Pork Tenderloin I tried out, Mmmm Mmmm Goood!!! Next I think I�ll try a brisket. Then next Saturday a guy that sells meat at the flea market (the tenderloin came from him $15) is supposed to have slabs of ribs, I�ll get several! Darn nice job! Mine is an old cedar chest set on end with legs. Old frying pan for the charcoal and wood chips. Will hold 20 pounds of salmon slabs on three old refigerator racks. Cost me about the same as yours. Haven't burned it up yet in five years.

Haven't had a chance this year yet ... but the kids are bugging me for a brisket. I was a bit shy hearing $7/lb, but a friend has recommended a butcher down near the border where he got a pork roast (inside round?) for $3/lbs. Needless to say, I expect I'll be taking a little drive in the near future.

I use a Weber Smokey Mountain charcoal smoker, using chunks of hard wood for added flavor. Yum, yum, yum!

beautiful setup, i'm still an apartment dweller, but i like to buy large cuts and slow-smoke them on a standard weber on the weekends to provide protein for a good long time...

We use a Cookshack smoker, the Smokette 009. Best money I ever spent! We'll probably upgrade to the larger AmeriQue soon.
I smoke meat at least twice a week. I buy whole chickens when they're on sale for $.79/lb, and smoke them up. Then I cook the carcasses down and can the broth. So much you can make with smoked chicken and the broth as well. I buy thick salmon steaks, salt it well with Kosher salt for a few hours, rinse it and smoke 90 minutes at 120 degrees, followed by 90 minutes at 180... now that's some fine eating! We do a lot of ribs as well. |

Very nice pit....looks like it will do a great job. Nothing like a good Bar-b-que.
And they can come in very handy if the lights go out...did a lot of Bar-b-queing after Hurricane Ike hit Houston. The gas stoved worked, but it just made the house that much hotter so I chose to cook more outside... |

ham turkey rabbit bird it all good , i have smoking like the one in the post a few spot up but i think the one i have is bigger , i have done 2 hams . 3 turkey an some ribs at one time , i, the time i cook all that meat at once it took almost 9 hours , some was done in half time like the ribs .

LA, There's really no point is smoking 'good' beef. Smoking is a way of improving cheap cuts, like the brisket. Brisket is pretty well near inedible if it's cooked fast, but you leave that sob smoke and let all the strings and fat and crap inside melt into sugar over 10 hours .... and you'll have to fight the kids off with a stick. A good roast lacks all that crap inside that makes smoking worth the time. A quick, heavy smoke, or even just indirect cooking whould be my choice. One smoke bag just to put a bit of flavour in there.
